Arugula is one of my favorite greens for salads, it gives a peppery kick to salad. Not everyone love it, because it may have bitter, strong taste especially if leaves are mature too much.

Arugula is so low in calories and rich in nutrients.

2 cups of arugula contains:

  • only 10 calories
  • 1 g proteins
  • >50% vitamin K which can help prevent bone fracture

Also it contains antioxidants –prevent cells damages by blocking free radicals, phytochemicals, vitamin C, A..

Detox Beet Arugula Salad

If you are not lover of arugula, test yourself by eating small portions with some nice dressing, and believe me you will love it…

Buckwheat groats need to be soaked in water overnight, and rinsed well before cooking. Soaking helps break some inhibitors of enzymes and helps digestion.

As all salads, you can use this salad as side dish or just main dish.

With this salad you will give to your body all 9 essential amino acids, vitamin K, C, antioxidants.

Instructions
  1. Wash arugula leaves and drain, place in bowl and add chopped scallions, shredded carrots and beet
  2. Then add cooked buckwheat groats on top and drizzle lemon dressing all over the salad
