Vegan burgers

 

I had little party, So I wondering what can I make so everyone will love and at same time enjoy in healthy food.

I wanted to be homemade, not store bought (they contain lot of additives and artificial flavors).

As someone who like taste of buckwheat, I made mini burgers with buckwheat seeds which are soaked and cooked first.

Vegan, gluten free, crispy outside, little chewy inside.

Just the way I like it.

Mini Buckwheat Burgers

For buns, I have used my favorite multigrain muffins.

Muffins are vegan, yeast free, but they are not gluten free – they contain spelt flour, but people with gluten intolerance can substitute with some gluten free flour.

Really good fit for Mini Burgers was salad made of kale, cucumber slices and green onions, with dressing made of vegan mayo, apple cider and lemon juice.

 

Put Vegan mayo and cherry tomato slices on bottom of buns, then salad and then burger.

Instructions
  1. Preheat oven on 375 degrees
  2. Sauteed chopped onions in saucepan to get soft and brown color, set aside in small plate and add chopped parsley, garlic and 1 tsp of paprika, mesh all together and leave 5 min to rest
  3. All other dry ingredients mix in big bowl, add cooked buckwheat, flax seed eggs (mix 2 spoons of ground flaxseed with 3 water all together to fill 1/4 cup), add dijon mustard and sauteed onions with parsley
  4. Add spices to your taste and mix all together to get thick batter
  5. In my case it was too sticky, so I added 2 spoons of flour
  6. Leave in fridge for 15 min and then make little patties and put on parchment paper on baking pan
  7. I made 15 mini patties, but you can make bigger one if you like
  8. Bake around 20 min and then turn them and bake another side for 10-15 min
  9. You don't want them burned
