Spelt crepes

 

After fried eggs, crepes are second thing I have learned to cook.

In my country it’s normal to make crepes if you don’t have anything else to offer to your unexpected guests. Cheap, easy to make, you usually have all ingredients you need: flour, milk, eggs, water.. everybody loves them and enjoy their taste.

I changed original recipe and made a vegan version.

So there are lot of options, you can make them savory, sweet, or regular and fill them with anything you like..

One of my favorite is with jam and walnuts

Instructions
  1. In big bowl mix all dry ingredients and then add water and coconut milk till you get smooth batter
  2. Leave batter in fridge for about 15- 30 min
  3. After that heat up the sauce pan or non stick iron skillet on medium temperature, spread little oil on bottom of pan, slowly pour batter on center of skillet and spread batter evenly on skillet and put back to cook
  4. When you see that bottom of the crepe is not sticky anymore and when it gets light brown color, then just flip over and cook other side of crepe for another 30 sec
  5. This batter can be tricky little bit, because there is not eggs and regular milk, so it can be ticker than regular batter for crepes, so try first one and see if it's too tick, pour less batter on pan and spread evenly to be thinner
  6. It happened a lot that first crepe turned out to be too oily or too thick or it's not that perfect, so just eat or throw away πŸ™‚
  7. Just put oil first time on iron skillet, after that you make crepes without. My skillet do great adding oil
  8. I suggest to put all crepes in some other skillet and cover so they will stay warm and soft
