Zucchini is one of my favorite vegetables. In any form grilled, fried, in soup, in stew, raw … I love the taste of zucchini.

Zucchini is very low in calories, at the same time very high in vitamin C, A, potassium and fiber.

Really good for people with diabetes, it can help stabilize blood sugar.

This type of lunch is very fulfilling and at same time very light and rich in nutrients..

In this bowl, I paired zucchini and arugula, with little bit of cucumbers and cherry tomatoes..

Arugula gives you antioxidants, lower the risk of cancer and improves your health of bones, fight osteoporosis and is full of nutrients.

Sauce is creamy cashew dressing (vegan) and is not too heavy..

I like the fact that is really nourishing and light and creamy at same time.. Really easy, delicious combination.

Instructions
  1. Spiralize zucchini into spaghetti shape. If you don't have spiralizer , use vegetable peeler and apply light pressure or use a knife
  2. Sautee zucchini spaghetti with chopped onions and garlic for about 5 min
  3. Wash cucumber very good before using spiralizer on cucumber. Make a different shapes or spaghetti shape if you like. Or you can just slice it
  4. While zucchini is sauteing, you can prepare sauce. Throw cashews in food processor, add all other ingredients and at the end add almond milk not too much little by little, if you want to moderate density of sauce
  5. Put washed fresh arugula in bowl, add zucchini, then sauce and on top of the sauce add cucumber spirals and cherry tomatoes
  6. Serve warm and enjoy.
